  • 3/4 cup all purpose flour
  • 3/4 cup whole wheat flour
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1/4 tsp baking powder
  • 1/4 tsp cinnamon
  • 1/8 tsp ground ginger
  • 3/4 cup low fat buttermilk
  • 1/3 cup drained canned crushed pineapple in juice
  • 1/4 cup fat free egg substitute
  • 1/4 cup finely shredded carrots
  • 1/4 cup packed brown sugar
  • 2 tbsp canola oil
  • 1/2 tsp vanilla

Step 1

Combine first group of ingredients in a large bowl.

Mix second group of ingredients in a bowl

Add first mixture to second mixture and stir just until flour mixture is moistened.

Fill muffin cups evenly with batter. Bake until toothpick inserted into center comes out clean, about 22 minutes. Let cool in pan on rack 5 minutes. Remove muffins from pan and let cool completely on rack.
