Ingredients

  • 2 cloves garlic
  • 2 Tablespoons chopped cilantro
  • Zest and juice of 1 lime
  • 2 oz vegetable oil
  • 1 jalapeno, seeded and minced
  • Freshly ground pepper to taste
  • 1 1/2 pounds large shrimp, peeled with tail on and cleaned

Step 1

1. Combine the first six ingredients and process in a food processor. Add the shrimp to the marinade, stir to coat and refrigerate for 30 minutes.

2. Place Himalayan Salt Slab on the grill (salt slab must be completely dry before heating). Heat grill slowly to 400 degrees - should take approximately 30 minutes. Caution: Salt slab will become very hot as it retains heat applied to it.

3. Remove shrimp from the marinade and allow excess to drip off. Place shrimp onto salt slab and sear shrimp on both sides until they are pink and firm, about 4 minutes total. Transfer shrimp to serving platter and serve hot.

When finished cooking on Himalayan Salt Slab, turn off heat to the grill and allow it to cool. It may take several hours to return to room temperature.

After cooling, clean the Salt Slab with scouring pad. Rinse with water and allow to dry. Lasts about one year.
