  • 2 lbs. parsnips
  • 1 Tbsp. olive oil

Step 1

Cut 2 lb parsnips into matchsticks. Toss in 1 Tbsp olive oil on large baking sheet and roast in a 425°F oven, stirring occasionally, until golden brown, about 35 min. Toss with 2 Tbsp each chopped parsley and grated Parmesan and 1 tsp truffle oil. Season to taste with salt and pepper. Serve with steak. Serves 6.
