Ingredients

  • 2 cups apple cider
  • 2 teaspoons yeast
  • 5-6 cups flour
  • 1 teaspoon kosher salt
  • 1 Dutch oven

Preparation

Step 1

Pour apple cider into saucepan to warm to fingers, not hot.
Move to bowl and sprinkle yeast and stir to dissolve. Let sit five minutes to proof.
Gradually add 2 cups of flour stirring with a wooden spoon u til mixture looks like mud.
Let this rise for one hour. In warm spot with damp towel covering bowl.
Sprinkle the salt around the edge of the bowl. Stir to incorporate.
Add 1 cup flour and fold into dough 100 times. Continue to add flour , fully incorporating, until dough pulls away from side of bowl.
Turn out onto floured surface, add more flour gradually. Knead. Form a boule,
Sprinkle clean bowl with flour to prevent dough from sticking, put dough in bowl, warm spot, cover with damp towel, let rise for an hour till doubled, take out of bowl, shape into boule, let rise one more time, about 15-20 minutes
Heat oven to 450 degrees. Place Dutch Oven in oven with lid on for 15 minutes.
Quickly, take Dutch Oven out of oven, remove lid, generously flour to prevent sticking, set dough into Dutch Oven, cut slits in top of the dough in shape of tic-tac-toe, put lid back on and place in oven for 20 minutes. Remove lid and finish baking until the boule is a deep golden brown, 10-15 minutes.
Remove from oven. Place bread on cutting board to rest for 10 minutes before cutting. Eat with salted butter.
