Ingredients

  • 1 small head of garlic
  • 1 tablespoon extra virgin olive oil
  • 5 ounces French or Italian bread, cubed (bet roasted garlic would be good! - It was)
  • 1 large leek, halved and thinly sliced
  • salt and pepper to taste
  • 1/2 cup (60 grams) Kraft Italiano Four-Cheese Light blend
  • 1/2 tablespoon fresh thyme
  • 1/4 cup or so of turkey stock or chicken stock
  • OPTIONAL - 8 ounces ground turkey, cooked and crumbled - to make a main dish

Step 1

Preheat oven to 375 degrees.

Remove the outer skin from the garlic and place the head in a small baking dish. Drizzle with 1/2 tsp olive oil and sprinkle lightly with salt and pepper. Cover with foil and roast for 40 minutes.

If using the turkey, sauté in a bit of olive oil, breaking up as you go and remove to a bowl.

Heat oil in a medium non-stick skillet over medium heat and cook the leeks, stirring occasionally, until tender but not brown, about 5-7 minutes. Squeeze the roasted garlic into the pan and smush it around for a minute or two to incorporate.

Add the leek mixture to the bread along with the cheese, thyme, salt and pepper and enough broth to moisten but not soak the mixture; combine with your hands or a spoon.

Spread the mixture into a shallow baking dish large enough to hold it (the glass ones with the blue lids work well) and bake until crisp and golden in spots, about 30 minutes. Serve warm, with gravy if you have it.
