Ingredients

  • 1 tsp olive oil
  • 1/2 medium onion, minced
  • 1 small tomato, seeds removed, minced
  • 1 clove garlic, minced
  • 1/4-1/2 jalapeno pepper, minced (depending on how spicy you want)
  • 1 tsp chili powder
  • 1/4 c dried bread crumbs
  • 2 Tbsp bbq sauce
  • 1 egg white, beaten
  • 1 can kidney beans

Preparation

Step 1

1. Heat oil in skillet over medium heat. Add onion, tomato, garlic, and jalapeno. Saute. (I chose to puree my veggies first because I don't like the "chunky" consistency, but you don't have to.)

2. Saute approx 5 minutes, until tender. Remove from heat and allow to cool.

3. Coarsely mash beans. Add in remaining ingredients. Form into 4 patties.

4. Cook in skillet about 3 minutes per side, or until browned and heated through.
