Ingredients
- 1 (14 1/2-oz) can evaporated milk
- 1 (13-oz) pkg lemon flavored gelatin
- 3/4 c sugar
- 1 1/2 c boiling water
- 3 Tbsp lemon jiuce
- 1 Tbsp grated lemon rind
- 2 sets of 5 chocolate wafer (thin-icebox type, 2 3/8 in in diameter), crushed fine
- 1/4 c melted butter
Preparation
Step 1
Chill can of milk overnight in the fridge.
Mix gelatin in sugar and dissolve in boiling water.
Chill until almost completely set.
Stir in lemon juice and rind.
In a large mixing bowl whip until it resembles a soft whipped cream.
Add gelatin mixture and continue whipping for about 2 minutes.
In 9 x 13 x 2 5/8 in pan, place crumbs.
Add melted butter, mix, press firmly into pan.
Pour in whipped lemon mixture.
Sprinkle on remaining crumbs.
Refrigerate until serving time. Yields 15-18 servings.
