Ingredients

  • 4 cups fresh corn or 2 (10 oz) packages of frozen corn
  • 1/4 cup sugar
  • 1 1/4 teaspoons of salt
  • 1/2 vanilla bean, hlaved legnthwise
  • 2 cups whole milk
  • 4 large eggs
  • 4 tablespoons butter, melted and cooled
  • 3 tablespoons flour
  • 1/4 cup chopped chives

Preparation

Step 1

Prehet oven to 350 degrees. Butter a 1 1/2 quart quiche dish or 10" pie plate.

Pulse half the corn in afood processor until coarsely chopped. Place in bowl with remaining corn, sugar and salt.

Scrape seeds from vanilla bean place in bowl. Add milk, flour, eggs, butter and chives. Add corn and stir until combined. Sprinkle with a little chive on top.

Bake until the center is set, 50 min to 1 hour. Let stand for 15 min before serving.

Cool completely then cover. Reheat at 350 for 15 min, or microwave.
