A very nice soup, filling and delicious. See notes below.

***Do not add the cheese early to save a step. I tried this and the cheese curdled. It was hideous to look at and my children thought it was the worst thing they’d ever seen. It was edible, though.

Ingredients

  • 1 lb hamburger, cooked
  • 1 onion, diced
  • 3/4 c diced celery
  • 3/4 c diced carrot
  • 3 Tbsp butter
  • 1 tsp basil
  • 3 c chicken broth (3 c water, 3 chicken bullion cubes)
  • 2-3 medium potatoes, peeled and diced
  • 1/4 cup flour
  • 8 oz Velveeta cheese
  • 1 1/2 c milk
  • 1/2 c sour cream

Preparation

Step 1

Saute onion and celery in butter in a large pot. Stir in flour, and add beef, basil, broth and potatoes. Cover and cook until potatoes are tender, about 15 minutes. On low, add cheese and milk, stirring to blend. Remove from heat and stir in sour cream. Adjust salt and pepper to taste.
