Ingredients

  • 6 bacon strips
  • 1 small onion, chopped
  • 1 small green pepper, chopped
  • 1 tsp olive oil
  • 8 oz carton egg substitute
  • 4 eggs
  • 1 C skim milk
  • 4 C frozen shredded hash browns, thawed
  • 1 C lo fat cheddar
  • 3/4 tsp salt
  • 1/2 tsp pepper
  • 1/4 tsp dill weed

Preparation

Step 1

- Cook bacon until crisp; cool and crumble
- Saute onion and pepper in oil until tender
- Whisk egg substitute, eggs, milk; stir in hash browns, cheese, spices, onion mixture, bacon
- Pour into 13 X 9 sprayed pan; bake uncovered at 350 for 30 - 35 min until knife inserted in center comes out clean
- May prepare ahead and refrigerate until ready to cook - allow extra time for cooking.
