Ingredients

  • 2 large ears corn
  • salt and pepper
  • 2 Tbsp. fresh lime juice, plus lime wedges, for serving
  • 2 Tbsp. olive oil
  • 1/2 small red onion, finely chopped
  • 2 small avocados, diced
  • 1 cup fresh cilantro leaves

Step 1

Place corn on the frill and grill, turning occasionally, until charred, about 3 minutes. Transfer the corn to a cutting board and remove the kernels from the cobs.

In a large bowl, whisk together the lime juice, oil and 1/4 tea. each salt and pepper. Add th3e corn and onion and toss to combine, the fold in the avocados and cilantro.
