Cornish Hens with Rice Stuffing

Ingredients
- 2 tbsp. slivered almonds
- 2 tbsp. finely chopped onion
- 1/3 cup uncooked rice
- 3 tbsp. butter
- 1 cup water
- 1 chicken bouillon cube
- 1 tsp. lemon juice

Preparation
Step 1
Saute rice, almonds, and onion in butter for 5 - 10 minutes.
Add water, bouillon, and lemon juice.
Bring to a boil. Reduce heat, cover and cook slowly for 20 - 25 minutes or until all liquid is absorbed. Stir in 1/2 cup chopped mushrooms.
Stuff 2 hens. Place breast side up on rack in baking pan. Brush with melted butter.
Roast covered at 400 F for 30 minutes.
Uncover and roast 1 hour longer.
