Broiled Asparagus with Lemon Tarragon

Ingredients
- 1 bunch of asparagus
- 4 tsp olive oil+ 1 tsp olive oil
- kosher salt and pepper to taste
- 1 tbsp fresh lemon juice
- 1 shallot, minced
- 1 tsp dried tarragon
- 1/4 tsp dijon mustard

Preparation
Step 1
Toss asparagus with 4 tsp olive oil, salt and pepper. Place on lined baking sheet and broil in preheated oven until tender. Turn spears over 1/2 way through cooking approx. 8 minutes total.
While spears are cooking mist lemon juice, shallot, tarragon, mustard, and remaining olive oil in small bowl. Season to taste with salt and pepper.
When asparagus is done place on platter and drizzle dressing on top.
