Ingredients
- 2 cups basil
- 1/3 cup grated fresh Parmesan cheese (about 1 1/2 ounces)
- 1/4 cup nonfat chicken broth
- 1 tablespoon chopped walnuts
- 1 tablespoon extra-virgin olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1 garlic clove, minced

Combine all ingredients in a food processor; process until smooth.
Notes: Yield: 3/4 cup (serving size: 2 tablespoons)
Really very good - especially for a light pesto
for some reason just "good" right after I made it, but then "excellent" after freezing and re-thawing. Used it on shrimp for skewered shrimp with pesto and it was just delicious.
