Ingredients

  • 4-6 fresh garlic cloves, chopped fine
  • 1 lb. large shrimp
  • 1/3 c. olive oil
  • 1/4 c. tomato sauce
  • 2 T. red wine vinegar
  • 2 T. chopped fresh basil
  • 1/2 t. salt
  • 1/2 t. cayenne pepper

Step 1

Peel and devein shrimp, leaving tail intact. In a large bowl, stir together oil, tomato sauce, vinegar, basil, garlic, salt and cayenne pepper. Add the shrimp to coat. Cover and refrigerate 30 minutes, tossing once or twice. Remove shrimp from marinade and reserve the marinade. Place shrimp in a single layer in large pan sprayed with oil. Cook 400 degrees, turning occasionally, brushing with reserved marinade, until shrimp turns pink about 6-8 minutes.
