Oriental Glazed Chicken

Ingredients
- 1 pound boneless, skinless chicken breasts (cut into 1 inch pieces)
- 1/4 cup light soy sauce
- 3 tablespoons vegetable oil
- 2 tablespoons chili sauce (Heinz)
- 1/2 teaspoon ground ginger
- 1/4 teaspoon garlic powder
- 1 cup chicken broth
- 1 tablespoon cornstarch
- 4 cups cole slaw mix
- 1 cup salted cashew nuts
- 3 cups cooked rice

Preparation
Step 1
Place chicken in a dish. In a small bowl mix soy sauce, honey, 2 tablespoons of vegetable oil, chili sauce, ginger and garlic powder. Pour over chicken and toss to coat. Cover and refrigerate for 1 hour.
Mix together broth and cornstarch until smooth. Set aside.
Heat large skillet over medium-high heat. Add chicken and marinade and simmer. Stir occasionally and cook chicken through. Set chicken aside.
Add remaining oil to skillet and add coleslaw mix. Cook until tender, 4 minutes. Stir in broth mixture, bring to a boil. Reduce heat to medium-high, simmer 1 minute until sauce thickens. Add in chicken and any liquid and heat through. Serve wtih rice.
