Crab-Stuffed Potatoes

Ingredients
- 4 baking potatoes
- 1/4 cup butter
- 1/4 cup half and half (1/4 to 1/3)
- salt and pepper
- 1 cup cheddar cheese
- 1/4 cup chopped scallion
- 1 package surimi, chopped

Preparation
Step 1
1. Bake potatoes at 425 degrees for 45-50 minutes, or until tender. When cool enough to handle, halve the potatoes lengthwise. Carefully scoop out pulp into a bowl, leaving a thin shell. Set shells aside.
2. Beat or mash potatoes with butter, cream, salt and pepper until smooth. Using a fork, stir in cheese and onions. Gently mix in crab. Stuff shells.
3. Return to oven for 15 minutes or until heated through.
Notes: These were fine and certainly easy enough, but crab taste wasn't discernable. Worthy of a repeat to use surimi.
