- 4 ounces good-quality dark chocolate, chopped
- 2/3 cup heavy cream
- 1 teaspoon bourbon
- 1 teaspoon minced fresh ginger
- pinch ground mace
- pinch cayenne
- 1 teaspoon instant coffee or espresso powder

In a double boiler, melt the chocolate In a saucepan over medium heat, warm th cream until it just starts to boil. Stir cream to the chocolate. Add bourbon, ginger, mace and cayenne to chocolate, and stir. If desir d, pour sauce into a fondue pot to keep warm.
