Ingredients

  • 2 tbsp. plus 1 tsp. olive oil divided
  • 1 tbsp. minced shallots
  • 1 cup dried figs, stemmed and quartered
  • 1/2 cup marsala
  • 1 tbsp. minced rosemary
  • 1 tsp. salt
  • Pepper
  • 1 1/2 cups all-purpose flour
  • 1 1/2 cups bread flour
  • 8 oz. goat cheese
  • 2 cups arugula
  • 1 pear thinly sliced

Step 1

Heat ½ tbsp.. oil add shallots cook about 5 minutes. Add figs, marsala, and rosemary. Increase heat, bring to a boil. Add 1 cup water. Reduce heat simmer until figs are soft adding water if needed. Jam should measure 1 ¼ cups. Season with salt and pepper. Pulse 1 ½ cups all-purpose flour, breads flour,1 ½ tbsp. oil, 1 tsp. salt and I cup water until dough forms. Divide into 4 pieces. Wrap in plastic and let rest 2 to 3 hours.
Preheat oven to 450. Roll out dough on a floured surface. Prebake the dough for 3 to 4 minutes.
Spread 3 to 4 tbsp. fig jam over each crust, scatter 2 oz. goat cheese over each crust. Bake for 5 minutes. Toss arugula and pear in oil season with salt and pepper top pizza with salad.
