  • 2 cups flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • 1 1/2 cups salad oil
  • 2 cups sugar
  • 4 eggs
  • 2 cups finely grated carrots
  • 1/2 cup butter or oleo
  • 1 8oz pkg cream cheese, softened
  • 1 lb confectioners sugar
  • 1 tsp vanilla
  • 1 cup chopped walnuts

Step 1

Sift Together: 2 cups flour, 1 tsp baking powder, 1 tsp cinnamon, 1 tsp baking soda, 1/4 tsp salt.

Combine: 1 1/2 cups sald oil, 2 cups sugar and mix well. Add one at a time: 4 eggs mixing well after each addition. Gradually add dry ingredients, mixing well. Add 2 cups finely grated carrots. Mix well and turn int 3 8 inch cake pans that have been greased and lined. Bake at 350 for 50-60 minutes.

Icing Directions: Combine 1/2 cup butter or oleo, 1 8oz pkg cream cheese and beat until light and fluffy. Wile beating, add 1 lb of confectioners sugar, 1 tsp vanilla and 1 cup chopped walnuts.
