Ingredients

  • 2/3 cup softened butter
  • 1 1/2 cups sugar
  • 2 eggs
  • 1 tbsp vanilla
  • grated rind of 2 lemons
  • 3 cups flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup milk
  • 1/2 cup plain yogurt
  • 1 1/2 cups blueberries - fresh or frozen
  • icing sugar

Preparation

Step 1

Cream butter with sugar. Add eggs one at a time. Add vanilla and lemon rind. Sift together dry ingredients. Stir milk with yogurt. Alternate wet and dry ingredients into mix. Spoon 1/2 of batter into a greased and floured bundt pan. Sprinkle with blueberries. Spoon over remaining batter. Bake at 360 for 60 minutes. Let cool in pan for 10 minutes. Invert on cooling rack. Dust with icing sugar
