Ingredients

  • 3 cups croutons, seasoned
  • 2 cups fresh basil
  • 1 cup lowfat mayonnaise
  • 4 teaspoons lemon juice
  • 6 slices turkey bacon, chopped
  • 4 cups chopped cooked chicken breast
  • 1 pint cherry tomatoes, halved
  • 4 scallions, minced

Preparation

Step 1

1. Heat oven to 350.

2. Puree basil, mayonnaise, lemon juice. Season.

3. In a skillet cook bacon until crisp, transfer to paper towels to drain.

4. Combine chicken, tomatoes, scallions, 2/3 of bacon, basil mayonnaise, s&p to taste. Add croutons, toss. Garnish with rest of bacon.

Notes: Absolutely scrumptious!
