Mint Chocolate Ice Cream

Ingredients
- 16 oz container nondairy whipped topping(or heavy cream for dairy)
- 3 egg yolks
- 3/4 cup confectioners sugar
- 1/2 cup coconut milk(or whole milk for dairy)
- 1/2 tsp mint extract
- a few drops green food coloring
- 1 9 oz bag quality chocolate chips(not chocolate flavored chips)

Preparation
Step 1
If using a mixer,whip the topping until stiff. Add the remaining ingred. one at a time and mix until just combined. Add the chocolate and fold together. Freeze overnight.
If using an ice cream maker,mix all ingredients except the choc. chips. Mix according to ice cream maker instructions(about 25-30 min). The last ten minutes before done add chocolate chips. Freeze.
