CRUSHED CHERRY TOMATO PASTA
Got this recipe from a Style at Home magazine... it's awesome - the cherry tomotoes are very sweet...

Ingredients
- 7 oz spaghetti
- 1 lb cherry tomatoes - halved
- 3 tbsp butter
- 4 green onions, sliced
- 1 crushed clove garlic
- 2 tbsp red wine vinegar
- sea salt and cracked black pepper
- 1/3 cup chopped fresh parsley leaves
- shaved parmensan

Preparation
Step 1
Cook pasta till al dente. Drain, return to saucepan and keep warm.
Crush tomatoes lightly with a tomato masher. Heat frying pan with butter and add green onions and garlic. Cook for 1 minute. Add red wine vinegar, tomatoes, salt and pepper and cook for 2-3 minutes. Add to the pasta with the parsley and toss till combined.
Serve with shaved parmesan.
