Ingredients
- 1/3 cup cornmeal
- 1/3 cup flour
- 1 tablespoon water
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 1 clove garlic, minced
- 1 egg
- 6 grouper fillets, 1" thick
- 1/2 cup light mayonnaise
- 1/3 cup pickle relish
- 1/4 cup minced shallot
- 2 tablespoons capers
- 1 tablespoon dijon mustard
- 2 teaspoons lemon zest
- 6 hamburger buns, split and toasted
- 3 cups shredded lettuce

Preparation
Step 1
1. Heat oven to 400.
2. Combine cornmeal and flour. Combine water-egg. Dip fillets in egg, then dredge in cornmeal. Place on sprayed baking sheet.
3. Bake 25 mins, or until fish flakes easily, turning once. Combine mayo-zest. Serve with buns and lettuce.
