Ingredients

  • GARNISH:
  • 1 tablespoon minced fresh ginger
  • 1/3 cup light brown sugar - (firmly packed)
  • 1/3 cup fresh lemon juice
  • 1/4 cup fresh lime juice
  • 4 dozen seedless red grapes
  • 4 medium mangoes peeled, pitted, and each cut into 8 (2") cubes
  • 2 medium pineapples peeled, cored, quartered, each cut 16 (2") wedges
  • 8 large peaches halved, pitted, and sliced in 8 pieces
  • 4 kiwi fruits peeled, quartered
  • 4 starfruit cut 1/2" slices
  • 16 bunches green grapes - (1 oz ea)

Preparation

Step 1

For marinade, blend ginger, brown sugar and lemon and lime juices in a small pan. Bring to a simmer over medium heat, stirring until brown sugar is completely dissolved. Remove from heat; set aside.

Carefully thread the fruits onto the skewers. An eye-pleasing order: Grape, mango, pineapple, another grape, peach, kiwi fruit, more mango, more pineapple, a third grape and, finally, a peach half again.

Brush kebabs generously with marinade 15 minutes before grilling or broiling. Grill kebabs 5 minutes, turning them once. Remove from heat and glaze once more with the marinade before serving.

This recipe yields 8 servings.
