Ingredients
- 2 tbsp. salt
- 2 tbsp. cayenne pepper
- 2 tbsp. paprika
- 5 1/2 tsp. garlic powder
- 2 tbsp. black pepper
- 1 tbsp. onion powder
- 1 tbsp. dried oregano
- 1 tbsp. dried thyme

Step 1
Blend all of the ingredients together and store in a tightly covered jar.
For blackened chicken or fish, heat a cast iron skillet on highest heat for 10 minutes. Dip chicken or fish in melted butter, then in seasoning mix. Press seasoning in with the palm of your hand.
When the pan is ready, cook chicken or fish about two (2) minutes on each side. Serve with sour cream.
