B's Date Filled Cookies

Ingredients

- 1 1/2 cups firmly packed brown sugar
- 1 cup margarine or butter softened
- 1 teaspoon vanilla
- 3 eggs
- 3 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- Filling
- 2 cups chopped dates
- 1 cup sugar
- 1 cup water

Preparation
Step 1
1. In large bowl, beat brown sugar and margarine until light and fluffy.
2. Add vanilla and eggs, beat well. Stir in the flour and baking soda; mix well.
3. Cover with plastic wrap; refrigerate at least two hours for easier handling.
4. Meanwhile, in a medium saucepan combine all filling ingredients.
5. Bring to a boil; reduce heat and simmer for 10 minutes, stirring frequently. Refrigerate until ready to use.
6. Mixture will thicken as it cools.
7. Heat oven to 375°F.
8. On a well floured surface, roll out one third of the dough at a time to 1/8 inch thickness. Keep remaining dough refrigerated.
9. Cut with 2 1/2 inch round cookie cutter. In one half of cookies, cut a 1” hole from center of cookie.
10. Place whole cookies on un-greased cookie sheet. 11. Spoon 1 teaspoon of the cooled filling onto center of each.
12. Add the top cookie with a hole. Using your fingers or a fork, press edges of dough to seal. Repeat.
13. Bake at 375°F for 7 to 10 minutes or until light golden brown.
Makes 3 1/2 dozen cookies.
