Ingredients

  • 1 large stewing hen or 3 lbs fryer or larger
  • 3 lbs beef (stew meat)
  • 2 lbs lean pork (or more)
  • 1 large onion; chopped
  • 5 lbs potatoes; peeled & diced
  • 1/4 cup worcestershire sauce
  • 2 cups hot barbecue sauce
  • 2 cups ketchup (more if needed)
  • salt & pepper to taste
  • 8 cups cream style corn

Preparation

Step 1

Combine hen, beef and pork; add water to cover well. Cook meat until tender; remove from broth; debone and chop meat. Skim grease from broth. Add onion and potatoes to broth and cook until tender; return meat to mixture and add next 4 ingredients. Bring mixture back to a boil and add corn. Turn off heat to prevent sticking.
* Makes 2 1/2 gallons.
* Can be frozen.
