Ingredients

  • 3 lg bell peppers, chopped
  • 2 onions, chopped
  • 4 cloves garlic, minced
  • 12 oz lean ground beef
  • 2 cans (10 oz each) diced tomatoes with green chiles
  • 2 Tbsp chili powder
  • 2 Tbsp tomato paste
  • 1 1/2 tsp cumin
  • 1 can (15 oz) dark-red kidney beans, rinsed and drained
  • %1/4c chopped cilantro (optional)
  • 6 Tbsp reduced-fat sour cream (optional)
  • Sliced fresh jalapenos (optional)

Preparation

Step 1

1. HEAT large skillet coated with cooking spray over medium-high heat. Add bell peppers and onions and cook until softened, about 5 minutes. Stir in garlic and cook, stirring, 1 minute. Add beef and cook, breaking up lumps with wooden spoon, about 2 minutes (beef will not be cooked through).

2 STIR in tomatoes (with juice), chili powder, tomato paste, and cumin. Transfer to slow cooker. Cover and cook until beef is done,
4 to 5 hours on low, stirring in beans for last hour of cooking. Season to taste with salt and black pepper and stir in cilantro (if using). Garnish with sour cream and jalapenos (if using).
