Ingredients

  • 3/4 cup mayo
  • 3 Tbs chopped red onion
  • 2 Tbs chopped parsley
  • salt & pepper
  • 4 crusty rolls
  • 1 1/4 cups dry bread crumbs
  • 24 oysters, shucked
  • 2 Tbs butter
  • 3 Tbs oil
  • 4 leaves lettuce

Preparation

Step 1

Combine mayo, onion, parsley and 1/4 tsp pepper. Halve rolls length wise and scoop out excess bread. Put rolls on a baking sheet and toast under broiler. Spread some of the mayo mixture on each roll.

Combine bread crumbs, 1 tsp salt and 1/4 tsp. pepper. Beat eggs to combine. Dip oysters into beaten eggs and then roll in crumbs. Melt butter in oil in a large frying pan over med-high heat. Just before frying, dip oysters in any remaining bread crumbs. Fry oyster until golden brown, about 1 minute. Drain on paper towels. Fill rolls with oysters and lettuce.
