Gooey Butter Cookies
Instead of using Yellow cake mix, you might try using Yellow Butter Cake Mix. The yellow butter cake mix give the cookie a texture that closer resemble the gooey butter cake.
Ingredients
- 8 ounces cream cheese softened
- 1/2 cup butter, softened
- 1 egg
- 1/2 teaspoon vanilla
- 1 box yellow cake mix
- 2 cups confectioners (powdered) sugar to roll balls in and dusting
- 1/2 stick unsalted butter, sliced and quartered for top after baking

Step 1
Cream together butter and cream cheese.
Add egg and vanilla, then cake mix.
Refrigerate for at least 1 hour to let cookie dough get firm.
Roll in 1 inch balls then roll in confectioner's sugar.
Preheat oven 350°F.
Bake cookies on parchment paper for 10 to 12 minutes or until cookies are slightly firm to touch.
Remove from oven and top with 1/4 pat of butter then dust with remaining powdered sugar. Allow cookies to firm up and cool on the pan before removing.
Makes about 24 cookies depending on size of roll.
