- 2 Tbsp. butter
- 1/2 cup chopped onion
- 1 4 oz. can chopped green chiles, drained and rinsed
- 1 can Campbell's Condensed cram of Celery Soup
- 5 eggs
- 2 cups shredded Monterey Jack cheese

Step 1
Preheat the oven to 350 degrees. Coat a 10" round pie plate that is at least 2 1/2" deep with nonstick cooking spray.
IN a small saute pan over medium heat, melt the butter, add the onion and chiles, and cook, stirring, until the onion is softened, 3-5 minutes.
In a large mixing bowl, whisk together the soup, eggs, and 1 cup of the cheese. Add the chiles and onion.
Pour the egg mixture into the prepared pie plate, sprinkle on the remaining 1 cup cheese, and bake the frittata until it is puffed and golden, about 30 minutes.
Let it rest for 10 minutes before serving.
