Ingredients
- 1 Tbsp. olive oil
- 1 Tbsp. while-grain Dijon mustard
- 1 Tbsp. balsamic vinegar
- 2 cloves garlic, minced
- 1 Tbsp. chopped fresh thyme
- 1 Tbsp. chopped fresh sage
- 1 bone-in center cut pork loin roast (about 5 lb)

Step 1
Heat oven to 450 degrees.
In bowl, combine oil, mustard, vinegar, garlic, thyme and sage; reserve 1/2 mixture. Place pork in roasting pan. Brush with remaining mustard mixture.
Roast pork 30 minutes, reducing heat to 300 degrees after 15 minutes. Roast 1 hour or until 145 degrees.
Remove pork from pan. Strain pan juice; skim and discard fat. Stir pan juices into reserve mustard mixture. Season with salt and pepper. Sere sauce mixture with the pork.
