Ingredients

  • 2 Tbsp. butter
  • 1 cup chopped onion
  • \two 10 oz. pkgs. frozen chopped spinach, thawed and squeezed dry
  • 6 eggs
  • 1 envelope Knorr cream of Spinach Soup Mix
  • 2 cups dry breadcrumbs
  • 1 cups freshly grated Parmesan cheese
  • 1/4 tea. freshly grated nutmeg

Preparation

Step 1

Preheat oven to 350 degrees. Coat a 9x13 baking dish with nonstick cooking spray.

In a 10" saute pan, melt the butter over medium heat, add the onion, and cook, stirring, until softened, 4-5 minutes. Add the spinach and cook, stirring, for 2 minutes.

Transfer the mixture to a large mixing bowl. Add the eggs, soup mix, breadcrumbs, cheese, and nutmeg and stir until combined. Pour the mixture into the prepared dish and bake until a toothpick comes out clean, 20-25 minutes.

Allow the dish to rest for 10 minutes before cutting into squares.
