Ingredients
- 6 eggs, beaten
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground white pepper
- 1/4 cup unsifted flour
- 1/4 teaspoon baking powder
- 2 cups shredded monterey jack cheese
- 2-3 tablespoons chopped fresh cilantro
- 3-4 teaspoons chopped jalapenio pepper, seeded
- 2 tablespoons chopped green chilis, drained

Step 1
Preheat oven to 400 degrees
Line a 9 x 9 x 2 inch square with alumium foil and generously grease with oil.
Blend together eggs, salt and pepper in large bowl and blend until foamy. Add flour and baking soda. Beat until smooth. Add the chiles and cheese and jalapeno , stir until well mixed. Pour into prepared pan.
Bake in preheated oven @400 for ten minutes, reduce heat to 325 and bake for 10 mintes or until firm. Cool in pan on rack for 20 minutes. Sprinkle with chopped cilantro. Remove from pan, transfer to cutting board, peel back alumium foil. Cut and serve.
