Grissini - Hard Italian Breadsticks - Toasted Sesame

These snappy breadsticks are traditional Italian, and you can eat several of them to fulfill your need-for-crunch, without blowing the diet! Nutritional info is per stick, so you can easily calculate.

Ingredients
- 623 g flour
- 397 g warm water
- 2 teaspoons yeast
- 1 1/2 teaspoons salt
- 2 tablespoons toasted sesame oil (or olive oil for lighter flavor)
- 1/3 cup toasted sesame seeds

Preparation
Step 1
In I large bowl, mix together flour, sesame seeds, yeast and salt. Add olive oil and about 3/4 of the water. Stir/knead adjusting water if necessary until the dough is smooth and elastic, kneading about 5 minutes.
Place dough in an oiled bowl, Turing to coat, and allow to rise until doubled, 1.5 - 2 hours.
Divide dough into 4 equal balls. Cover 3 balls with a cloth.
Roll out dough into a rectangle, about 8x12 inches. Cut into 16 long pieces (a pizza cutter is great for this!) Cut longways - it helps to cut into 8 pieces (1 inch each) and cut each one in half.
Heat oven to 350. Line a baking sheet with parchment paper.
Fold each piece in half (to make short 6" pieces) then begin to roll and stretch the pieces on the UNFLOURED counter top until they are a bit longer than your baking pan.
Place all breadsticks as you finish them on the baking sheet. When the sheet is full, spray lightly with spray oil, then sprinkle on more sesame seeds or flake sea salt is desired (not included in nutritional info). Bake for 25 - 30 minutes or until golden brown. Cool on wire racks.
Repeat for other dough balls.
