Ingredients

  • Crust:
  • 38 Vanilla (or Could Use Chocolate) Wafers (1 Box) -- crushed
  • 1/3 cup soft butter or margarine
  • Filling:
  • 4 Cups miniature white marshmallows -- (1 bag)
  • 1/3 C. cold water
  • 2 Tbsp. instant coffee or t Tbsp coffee liqueur and 1 Tbsp. instant coffee
  • 1 Litre whipping cream
  • 2 Tsp. Vanilla

Preparation

Step 1

1. Spray 8" x 12" pan with Pam. Blend crumbs and butter and pat into bottom of dish.

2. Melt 3/4 of the marshmallows in double boiler with water, coffee and/or Tia Maria until it mounds.

3. Place in cold water until cool.

4. Whip the cream with vanilla.

5. Fold 1/3 of the whipped cream into the cooled coffee mallow mixture.

6. Fold in the remaining marshmallows.

7. Pour coffee mallow/whipped cream mixture over the crust

Topping:

8. Top with remaining whipped cream and sprinkle with shaved chocolate.
