THIGHS****Spicy Peanut Chicken

Ingredients
- 1/4 cup smooth peanut butter - I would have liked a more "Peanutty" flavour ... try the powdered PB maybe?
- 1/4 cup water
- 1 teaspoon toasted sesame oil
- 2 tablespoons soy sauce
- 2 teaspoons sambal oelek -I used Thai Kitchen red chili paste, which wasn't enough heat ... try sambal or Sriracha
- 2 teaspoons rice vinegar
- 4 to 6 skinless chicken thighs

Preparation
Step 1
Preheat broiler.
Mix together peanut butter, water, sesame oil, soy sauce, sambal oelek, and rice vinegar. Toss chicken thighs in sauce, and put in a ziplock bag. At this point, you can either refrigerate overnight or freeze for longer storage, removing from freezer the day before cooking , to thaw. In either case, bring to room temperature before cooking.
When ready to cook, place the thighs on a parchment lined baking sheet. Broil 10 inches from heat until chicken is cooked through, about 15 to 20 minutes (watch to make sure it doesn't burn).
