Ingredients

  • 1 Tbsp olive oil
  • 2 lb tri tip sirloin roast
  • 2 c smoky barbecue sauce
  • 4 scallions, thinly sliced
  • 1/4 c reduced-fat sour cream
  • 1/4 c reduced-fat mayonnaise
  • 2 Tbsp prepared horseradish
  • 4 tsp white wine vinegar
  • 2 tsp honey
  • 2 tsp jalapeno pepper sauce
  • 6 c shredded cabbage-and-carrot coleslaw mix
  • 8 whole wheat rolls, split

Step 1

l Heat oil in large skillet and brown beef on both sides, turning, about 6 minutes. Coat slow-cooker pot with cooking spray. Add barbecue sauce and scallions. Nestle beef into mixture. Cover and cook until beef is tender, 6 to 8 hours on low or 4 to 5 hours on high. Transfer beef to cutting board and let stand 1O minutes before cutting into thin slices.

2 Stir together sour cream, mayonnaise, horse¬radish, vinegar, honey, and pepper sauce in large bowl while meat is cooking. Add coleslaw mix and toss until evenly coated with dressing. Chill until ready to serve.

3 SERVE beef on rolls and top with slaw. Serve with additional barbecue sauce, if desired.
