Ingredients

  • 1 lb. ground lean pork
  • 1 c. soft bread crumbs
  • 1 egg, slightly beaten
  • 1 sm. onion, chopped
  • 1/4 tsp. poultry seasoning
  • 1 tsp. salt
  • 1/8 tsp. pepper
  • Fine dry bread crumbs
  • 4 slices bacon
  • 2 tbsp. flour
  • 1 c. light cream
  • Seasoned salt and pepper

Preparation

Step 1

Mix first 7 ingredients and shape into a loaf. Roll in crumbs and put in shallow baking pan. Arrange bacon strips on loaf. Bake in 350 degree oven about 1 hour. Remove loaf to hot platter. Pour off all but 2 tablespoons fat from pan. Blend flour into fat in pan. Gradually add cream and cook, stirring, until thickened. Add seasoned salt and pepper to taste. Serve with loaf.
