Ingredients
- 4 medium carrots
- 1 tablespoon fresh lime juice
- 1/8 teaspoon lime zest, minced
- 2 tablespoons cilantro
- 1 teaspoon vegetable oil

Preparation
Step 1
Finely shred carrots and in a bowl toss together with remaining ingredients and salt and pepper to taste. Serve salad garnished with cilantro.
Notes: Good - but very tart, next time add a little bit of brown sugar to cut the tartness.
