Peaches n Cream Crumb Muffins

They are so easy to make (hip hooray!!) and just lovely muffins. That crumb topping is so tempting, right?

Ingredients
- 1 3/4 cup flour
- 1/2 teaspoon baking soda
- 2 teaspoons baking powder
- 1/2 teaspoon cream of tartar
- 1/4 teaspoon salt
- 1/3 cup softened butter
- 2 large eggs
- 2/3 cup sugar
- 1 cup peach puree *I stick a couple of peaches, peeled, in the blender
- Topping
- 3/4 cup flour
- 3/4 cup sugar
- 4 tablespoons cold, unsalted butter

Step 1
Heat the oven to 375 degrees. Spray a muffin tin with non stick spray.
In a small bowl, mix the flour and sugar and then using a fork or pastry cutter, cut in the butter.
In a medium bowl, whisk together the flour, baking soda, baking powder, cream of tartar, and salt. Set aside. In a standing mixer, mix the butter, sugar, eggs until smooth. Add the flour a little at a time alternating with the peach puree. Scoop out into the muffin tin filling about 2/3 full. Sprinkle with the topping and bake for 15-20 minutes or 25-30 minutes for jumbo muffins.
