Pork Loin w. Blackberry Chutney

Ingredients
- 3-4 lb. boneless pork loin roast
- 3 Tbsp, BBQ seasoning
- 3 Tbsp. whole grain mustard
- CHUTNEY
- 1 Tbsp. olive oil
- 1 medium red onion, finely chopped
- 1 Tbsp. minced fresh ginger
- 1 tea. minced fresh garlic
- 2 jalapenos, minced
- 1 lb. fresh blackberries
- 1/3 cup sugar
- 2 Tbsp. red wine vinegar

Step 1
Rinse pork loin and trim silver skin and e3xcewss fat. Sprinkle evenly with BBQ seasoning, spread with mustard, coating all side.
Cook on grill with lid closed, at least 2 hours until a thermometer reads 145 degrees, or to desire doneness. Cover with foil, and let stand 10-15 minutes.
CHUTNEY In a small saucepan, heat olive oil over medium heat. Add onion, ginger, and garlic. Cook until onion is translucent, 4-5 minutes. Add jalapeno and blackberries. Cook, stirring occasionally, 4 minutes. Add sugar and vinegar, and bring to a boil. Reduce heat to medium low and simmer 8-10 minutes, stirring occasionally.l
Slice pork loin into 1" slices, and top with hot chutney.
Refrigerate remaining chutney up to 1 week.
