Asian-style Noodle Salad

Udon noodles are thick Japanese wheat noodles. Ramen, not the instant kind packaged with soup, is an egg noodle sometimes called Shuka soba or Chinese curly noodles. Spaghetti or linguine may be substituted. For extra spice, add a drizzle of hot chili oil or a dash of hot sauce to the noodles

Ingredients
- Salad Ingredients:
- 1/2 lb ramen or udon noodles
- 1/2 cup shredded carrot
- 1/2 cup cabbage, chopped
- 1 cup bean sprouts
- 1 cucumber, cut into matchsticks
- 1/2 of a bunch of green onion, chopped
- 1/2 of a red pepper, thinly sliced
- 1-1/2 cups cooked chicken, shredded
- Dressing ingredients:
- 5 T rice vinegar
- 4 T soy sauce
- 2 T dark sesame oil, divided
- 1 T grated ginger
- Salt and pepper to taste
- 1 T toasted sesame sssed
- 1 T cilantro, chopped (optional)

Preparation
Step 1
Cook noodles according to package directions. During the last minute of cooking, add the bean sprouts. Rinse under cold water; drain well. To prevent noodles from sticking toss them with 1/2 tsp of sesame oil. Place noodles and remaining salad ingedients in a bowl. Whisk together dressing ingredients in a small bowl; pour over noodle salad. Mix thoroughly. Serve at room temperature or cold.
