Ingredients

  • 3/4 cup white wine
  • 1 1/2 lbs scallops cut into 3/4 inch chunks
  • Butter
  • 3/4 pound mushrooms sliced
  • 2 tbsp. Flour
  • 1 1/4 cup Swiss cheese
  • Mashed potatoes

Step 1

Bring wine to a boil and add scallops. Cook over medium heat for 3-4 minutes. Remove scallops and set aside. Measure liquid, if more than 1 cup cook down and if less than one cup add water. Set aside. Add 3 tablespoons butter to the same pan with the mushrooms. Cook until liquid is gone. Stir in 2 tablespoons of flour and remove from heat. Slowly stir in reserved cooking liquid. Bring to a boil until thick. Reduce heat and stir in 1 cup Swiss cheese. Return scallops add salt to taste. Spoon mixture into casserole dishes and place mashed potatoes around the outside edges. Bake @400 for 20 minutes.
