  • 1/2 cup chopped onion
  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 4 cups coarsely shredded cabbage
  • 1/2 cup chopped carrot
  • 3 cups vegetable broth
  • 1/2 teaspoon salt, or to taste
  • 1/8 teaspoon ground black pepper
  • 3 cups diced potato
  • 1 can (14 1/2 ounces) evaporated milk
  • Minced parsley
  • 1 dash paprika

Step 1

In a large heavy saucepan or Dutch oven, heat butter over medium-low heat; cook onion until golden in color. Stir in flour until well blended. Add cabbage and carrots along with the broth, salt, pepper, and potatoes. Bring to a boil, stirring frequently; reduce heat to low. Cover and cook until tender, stirring frequently, about 20 minutes. Add milk. Heat through, but do not boil. Taste and adjust seasonings, added more salt and pepper, as needed. Sprinkle each serving with a little parsley and a dash of paprika, if desired.

Outstanding! I've been looking for a good cabbage soup recipe for years. I lost the one I really liked, but it required a ham bone anyway. I love that I can make this one any time and not wait for a bone. I may add a bit of chopped ham when I make it again.

Just like a restaurant! This soup was amazing! I made it using a vegetable broth I made that had some cayenne pepper in it (quite a bit by accident). This gave it a little spice. I also used parsely, salt, pepper, and paprika to season it. My friend who tried it with me absolutely loved it and said that, "it was just like a soup from a restaurant!" Which I would have to agree to. I used evaporated milk and loved the creaminess but I think I'm going to try 1% milk to make it a little less fattening.

This Soup was wonderful. My whole family enjoyed it. We are taking it to a church function tomorrow.. My 6 year old ate 3 bowls.
