LEMON FILLED DOUGHNUT TWISTS

Ingredients
- Glaze:
- 1-13 -3/4 oz. package hot roll mix
- 3/4 cup granulated sugar
- 3 tablespoons cornstarch
- 1/4 cup lemon juice
- 2 beaten egg yolks
- 1 tablespoon margarine
- 1 teaspoon finely shredded lemon peel
- Cooking oil
- Glaze
- 1-1/2 cups sifted powdered sugar
- 2-3 tablespoons water

Step 1
Prepare roll mix according to package directions. Cover, let rise 45-60 minutes.
Combine sugar, cornstarch, and 1/8 teaspoon salt. Stir in one cup water, juice, yolks and margarine. Cook and stir until bubbly, cook 1 minute more. Remove from heat, stir in peel. Cover chill. Knead dough 10 times. Roll out to 9" x 7". Cut into 21 3" x 1" strips. Roll each strip to a 9" rope, fold in half and twist several times, pinch edges together.
Place on a lightly floured baking sheet. Cover, let rise 30 minutes. Fry in deep hot oil (375 degrees) for 1 minute per side. Drain on paper towel, cool. Slit twists lengthwise on one side, fill with 1-1/2 tablespoon lemon filling.
Glaze: Combine sifted powdered sugar and water. Drizzle over twists. Makes 21.
