Banana Bread: Gluten, Egg, Nut Free

Ingredients
- 5 ripe bananas
- 1/4 cup whole milk (if you are dairy free use whole coconut milk)
- 1/3 cup melted coconut oil (or melted butter)
- Juice of 1/2 lemon
- 2-3 TB sucanat or organic pure cane sugar (I think honey would work too)
- 1/2 cup sorghum flour
- 1 cup tapioca flour
- 1 white rice flour
- 1 TB cinnamon
- 1 tsp aluminium free baking powder
- 1 tsp baking soda
- 1/4 tsp sea salt

Preparation
Step 1
1. Blend the banana, butter, milk, lemon juice, and sucanat in a food processor, blender, or with hand held beaters.
2. Add the rest of the ingredients and blend until smooth.
3. Bake at 350 degrees in a small buttered (or coconut oiled) loaf pan for 60 minutes. Let the loaf cool a good 15 or so minutes before cutting.
She used a glass loaf pan. May need to adjust cooking time if using a different type or size.
