  • 4 bunches whole carrots, cleaned and trimmed (leaving a little of the tops on if desired), about 2 lbs after trimming
  • 2 tbsp extra virgin olive oil
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • 1 tsp kosher salt

Step 1

ROASTED WHOLE CARROTS WITH CUMIN AND SMOKED PAPRIKA
It’s a treat to have sweet, spring carrots roasted whole. Count on three to four per person.
4 bunches whole carrots, cleaned and trimmed (leaving a little of the tops on if desired), about 2 lbs after trimming
2 tbsp extra virgin olive oil
1 tsp smoked paprika
1 tsp cumin
1 tsp kosher salt
1. Place carrots in a large bowl and toss with olive oil, smoked paprika, cumin and salt.
2. Place a large baking sheet in a preheated 425F oven and heat at least 5 minutes.
3. Place carrots on hot baking pan and roast 20 to 25 minutes or until lightly browned, shaking pan occasionally. Makes 6 to 8 servings
